A proper British roasting joint from our slow-grown, grass-fed and grass-finished Hereford beef.
This comes from a mature four-year-old animal, raised primarily on pasture and given supplementary feed only when genuinely necessary. Allowing cattle to mature slowly gives these traditional roasting cuts a deeper, fuller flavour than younger, faster-finished beef.
Each joint is selected from topside, silverside or thick flank, depending on what our butcher considers best from the animal. These lean, traditional cuts are made for roasting gently and carving thinly across the grain.
