A substantial half brisket from our slow-grown, grass-fed and grass-finished Hereford beef.
This comes from a mature four-year-old animal, raised primarily on pasture and given supplementary feed only when genuinely necessary. Its maturity gives the brisket exceptional depth of flavour, while the natural fat and connective tissue make it particularly rewarding when cooked slowly.
Given time, the meat becomes beautifully tender and rich. It is ideal for slow roasting, braising, pot-roasting or smoking.
Cook it low and slow and let the natural fat do the work.
