A deeply flavoured shoulder joint from our slow-grown, grass-fed and grass-finished Hereford beef.
This comes from a mature four-year-old animal, raised primarily on pasture and given supplementary feed only when genuinely necessary. Because the shoulder works harder than the prime steak cuts, it develops tremendous flavour and character.
Long, gentle cooking breaks down the natural connective tissue until the meat becomes wonderfully tender, rich and succulent.
Ideal for pot roasting, pulled beef, casseroles and slow-cooked Sunday lunches.
