This comes from a mature four-year-old animal, raised primarily on pasture and given supplementary feed only when genuinely necessary. These lesser-known cuts are prized not for uniformity, but for their exceptional flavour and character.
Your pack may contain flat iron, bavette, skirt or onglet, depending on what is available from the animal. Each has its own texture and personality, but all reward quick cooking over high heat.
